Pour blueberries into dish covering bottom evenly. Pour over batter. Bake in medium oven 350 – 370 degrees for 20-25 minutes. Blackberries, peaches and or apples may be substituted and or mixed together. ============================ Summer Squash Casserole ============================ 2 lbs summer squash (yellow, crook neck, zucchini, patty pan) (About 4 cups cubed 3/4") 1/2 cup chopped onion 3/4 cup Cracker Crumbs 2 tbsp. butter 1 1/2 grated Cheese (Colby/longhorn) 3 eggs lightly beaten 1/2 cup evaporated milk salt and pepper to taste Steam squash and onion until tender. Butter 9x9 casserole dish Mix together eggs, milk, cracker crumbs, and 3/4 cup of cheese. Pour over steamed squash and mix evenly. Pour mixture into dish, sprinkle remaining cheese over top and bake in medium-hot oven (425 degrees) until mixture firm and cheese begins to brown. About 25 minutes.
